California Chicken Sandwich
Ingredients:
5 chicken thighs, boneless, skinless
5 Brioche rolls or any bread you like
2 Tbsp. butter
1 large tomato, sliced
1 avocado, sliced
5 slices romaine lettuce, or iceberg lettuce
5 slices of bacon
1 large yellow onion, sliced
2 Tbsp. Olive oil
5 slices of Monterey Jack cheese
Salt
Onion powder
Garlic powder
Smoked paprika
Ground coriander
pepper
Citrus Sauce:
⅓ cup avocado mayonnaise
2 Tbsp of frozen orange juice concentrate
1 tsp. Fresh lime juice
Zest from 1 lime
½ tsp. Ground cumin
Directions:
Pour two tablespoons of olive oil into a large frying pan over medium high heat to start. Place the onion in the pan and toss to coat. After 2-3 minutes lower the temperature to low and cook for 40 minutes tossing frequently. You want the onion to cook low and slow until they reduce and caramelize to a beautiful golden brown. Then turn off the heat and keep warm.
Place all the ingredients for the citrus mayo into a bowl and stir to combine. Cover and refrigerate until ready to use.
Place a large frying pan over medium heat and add the bacon. Toss frequently until the bacon is cooked and is golden brown. Place onto a paper-towel covered plate to drain and keep warm. Pour off all but 1 to 2 Tbsp. of the grease in the pan to cook the chicken in. Keep any leftover bacon grease for any other cooking you may do.
Remove any excess fat from the chicken thighs with a knife. Then unfold the thighs so they lay flat and pound the thighs with a meat tenderizer mallet until they are between ¼ to ½ inch thick. Season with salt, onion powder, garlic powder, paprika, coriander and pepper. Pat the spices so they stick to the chicken. Turn the thighs over and season the second side.
Preheat a large frying pan over medium high heat and when the grease is hot lay the thighs in the pan. They will cook pretty fast, say 4 to 5 minutes per side or until golden brown and the internal temperature is 165 degrees F. After you turn the thighs over, let it cook 2 minutes and then place the cheese on top along with a slice of bacon. Cover with a lid and it should be done by the time the cheese melts.
Heat another pan up and add 1 Tbsp. of butter. Once the pan is hot and butter is melted lay your sliced brioche buns in the pan, cut side down. Toast until they are a golden brown.
To serve, place some citrus sauce on the bottom half of the bun followed by lettuce, more sauce, chicken burger, tomato, avocado slices and one last drizzle of sauce. Put the lid on and serve! Enjoy!
