Ingredients:
For the Chicken
6 medium chicken thighs, cut into strips
1 tablespoon oil for frying
1 teaspoon garlic powder
1 teaspoon coriander
1 teaspoon oregano
1 teaspoon cumin
1⁄4 teaspoon cayenne pepper (This is optional, but I like the heat.)
1 teaspoon turmeric
1 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons chilli powder
For the Salsa
2 large cobs of corn, sliced down the cob
1 large tomato, cubed
1 teaspoon olive oil (Applied to the corn)
1 teaspoon chilli powder (Applied to the corn)
1⁄2 teaspoon salt (Applied to the corn)
1 teaspoon ground black pepper (Applied to the corn)
1 medium avocado, cubed
1 small Spanish onion, diced
1 medium jalapeño, diced
2 tablespoons fresh cilantro, diced
1 teaspoon salt
1 teaspoon ground black pepper
1 small lime, juiced
To Build the Taco
6 medium tortilla wrappers (You can also use taco shells)
1⁄2 cup ranch dressing
Additional Notes:
Chicken Marination: To enhance the flavors of the chicken, consider marinating it for at least 30 minutes before cooking.
Grilling Option: If you prefer a smoky flavor, you can grill the marinated chicken instead of pan-frying it. Preheat the grill to medium-high heat and cook the chicken until it reaches an internal temperature of 165°F (74°C). This grilling method will impart a delicious charred flavor to the meat.
Tortilla Selection: Choose soft corn tortillas for an authentic street food experience. You can warm them up by heating them in a dry skillet for a few seconds on each side or by placing them directly on a stovetop burner for a quick char. This will make them pliable and enhance their taste.
