Crepes can do a lot of things, but one thing I’ve been wanting to try out for a long time is this breakfast stuffed crepe that’s pan-fried to crispy perfection and loaded with a good ol’ fashion american breakfast spread. It can be customized to your liking and stuffed with whatever you can come up with and for that reason this recipe has a million a one variants to look forward to. Ingredients:
1 cup ap flour
1 cup milk (adjust to consistency)
2 whole eggs
2 tbsp melted butter
1 tsp salt
1 cup thin sliced Yukon gold potatoes
1 cup sliced applewood smoked bacon
1 cup thin Sliced onions
2 tbsp malt vinegar
1 whole egg, sunny side up
1 cup grated cheddar cheese
2 tbsp sliced scallions
