Chicken broth or vegetable broth 1 can 15 oz. Cannellini beans rinsed 1 can 15 oz. diced fire roasted tomatoes 1 butternut squash (2 ½ cups) peeled, deseeded, and cut into bite size chunks 1 rutabaga, microwave 4 - 5 minutes on high, cooled, peeled and cut into bite size chunks 1 ½ cups brussels sprouts, sliced paper thin 1 tsp. Dried basil ¾ tsp. Dried oregano 1 tsp. Salt 1 cup pasta, I used Banza pasta but any will work 1 Tbsp. red wine vinegar 1 Tbsp. olive oil Grated parmesan cheese, optional Directions: Turn the instant pot to saute and add 1 Tbsp. olive oil to the pot. When hot add the onion and saute for 3 minutes. Then add the garlic and stir for 1 minute more. Then add the chicken broth, beans, tomatoes, the butternut squash and rutabaga, the basil, oregano and salt. Stir and then cover with the lid and pressure cook on high for 10 minutes. After 10 minutes, do a natural release for 15 minutes. Release all the pressure and take the lid off. Add the noodles, stir and then place the lid back on with the instant pot turned off. After 10 minutes, check the noodles for doneness. If they are done, add the red wine vinegar and and all the brussels sprouts except some for garnish on top. Stir to combine everything and serve it up into bowls. Top with some grated parmesan cheese and a sprinkle of brussels sprouts and enjoy! Thanks for watching and sharing! Rockin Robin P.S.
