This is my recipe for what I call Packet Formed Ham. The stuff you buy in the store but way better. This is a straightforward recipe to make delicious Formed Ham.

Taking Cooking food back to basics.
Ingredients
1 kilo pork mince
1 kilo pork shoulder cubed
Salt 15g per kilo
Brown Sugar 10g per kilo
cure no1 3g per kilo -
sodium erythorbate ½g per kilo
Milk powder as a binder 10g per kilo – about 1 % weight for the binder
1 tsp garlic powder for a subtle garlic taste
No water used in this mix
Leave overnight
Poach in water just under level of the top of the ham tube
until internal temp reaches
80c – 180f
NOTE: sodium erythorbate can be replaced with ascorbic acid
