Lollies (candies) are not really my thing (they were when I was little), but Honeycomb Toffee, also called Hokey Pokey is such a special treat. Honeycomb has such amazing spongy crisp and delicious toffee flavour. Unlike its name and looks, this Honeycomb doesn’t really have honey in it. You can definitely add a little amount of honey too, if preferred. Happy toffee-ing!

Recipe
Water 60-80 (water quantity doesn’t really matter here)
Sugar 400 gr
Corn Syrup 50 gr (or Glucose, Golden Syrup for a deeper flavour)
Baking Soda 12 gr (sifted to prevent lumps)
Notes:
- Toffee is super hot, be very careful not to touch it before it completely cools down.
- Cleaning the pot might seem horror as toffee hardens on the pot, but worry not. Place your pot on the sink, fill it with boiling water. The hard toffee dissolves in hot
