Kiev Cake/Meringue layers with buttercream.

Kiev Cake has very unique texture. Crunchy Meringue layers sandwiched together with buttercream. To most people it looks like a very complicated cake to make. I want to show you very simple recipe and I hope you will like making it at home. For the meringue layers we will need: 200g egg whites(which is about egg whites from 5 large eggs or 5 medium) 200g sugar 50g flour 150g roasted peanuts(you can use hazelnuts or cashew too) 7g vanilla powder Method: You can roast peanuts for added crunch. Cut them into tiny pieces. In a bowl of a stand up mixer add egg whites and beat ad medium speed until foamy and white. Gradually add sugar and mix until stiff peaks, add vanilla powder. In a separate bowl combine: chopped peanuts, flour and 50g of sugar. Add to meringue and mix carefully just to combine. Using spring forms form 2 layers on a baking sheet side by side and bake in preheated to 285°F(140°C) for 90 minutes. take out and let cool completely. F
