This healthy egg recipe is made with potatoes and this easy and delicious breakfast recipe for Eggs with Potatoes and Tomatoes! In this video, I’ll show you how to make a tasty Afghani omelette using simple ingredients like potatoes and eggs. INGREDIENTS: - 500 g Potato - Olive Oil - 100 g Onion - 30 g Butter - 300 g Tomato - Salt, Black pepper - Oregano (Optional) - 6 Eggs - 5 g Basil or Cilantro - 1 Lemon (Optional) INSTRUCTIONS: 1. Heat Olive oil in a large skillet over medium heat. 2. Add potatoes and sauté for 5-6 minutes, until they are almost cooked through. 3. Add onions and cook for an additional 2-3 minutes, until the onions are slightly softened. 4. While the onions cook, finely dice tomatoes and add them to the pan. Season with salt and black pepper. Cover and cook for 6-8 minutes on low heat. 5. Reduce the heat to low. Crack each egg into a separate bowl, then add them one by one into the pan. 6. Cover the skillet with a lid and cook for 3-5 minutes, or until the eggs are cooked to your preference.
