INGREDIENTS Serves 2 (multiply the ingredients for more but it’s best to make in batches of 2 at a time) 2 steaks, prime cut (I used porterhouse, fillet or rib eye) 1 tbsp olive oil for frying 1 small shallot 1 tbsp butter 100 ml (3.4 fl oz) white wine 2 tbsp cognac  2 tbsp freshly ground peppercorns 50 to 100 ml (1.7 fl oz - 3.4 fl oz) heavy whipping cream 100 ml (3.4 fl oz) reduced brown beef or veal stock
