Mix and pour in a spheric ice mold and put in the freezer. (Optional) Yuzu mousse : 100ml lemon juice 28g Pro-espuma cold 60ml sugar water 1 teaspoon Yuzu paste 1. In a bowl, mix the lemon juice, sugar water and Yuzu paste. 2. Heat it and add the pro-espuma. 3. Filter and pour in a cream canister. Shake well and put 30mn in the fridge.
