Buy your copy of our ’Victorian Way’ cookery book: Visit Audley End House and Gardens for yourself: A good way to show off the skills of your gardeners, this ‘fool’ is a mixture of medlars, cream and sugar — a simple but delicious dessert course. Sometimes known as ‘dog’s arse fruit’ for their unusual shape, medlars are related to apples and have a similar flavour, with a hint of apricot or dates.
