Roasted Carrots Recipe
Ingredients:
1 lb carrots, organic, full length carrots, rinsed and peeled
2 Tbsp. olive oil, avocado oil may be substituted
Pinch or sprinkle of lemon zest or zest of 1 lemon
1 Tbsp. fresh Thyme or Rosemary, petals removed and chopped
Salt to taste
Fresh organic parsley, rinsed and chopped
Directions:
Preheat oven to 400 degrees F.
Cut the carrots into equal sized pieces. Just do the best you can. Place them in a bowl and add the olive oil, chopped thyme, lemon zest and a sprinkle of salt. Toss to combine and evenly distribute the spices.
Pour the veggies out onto a parchment paper lined baking sheet. Be sure and spread out the carrots so that they are in a single layer and not touching each other. This will insure they roast and don’t steam.
Place the pan in the middle of the oven and roast for 20 minutes. Check the carrots at that time and test for doneness by piercing with a fork. Then lower the oven temperature to 375 degrees F. and roast an additional 8 to 15 minutes. You are looking for a nice golden brown look to the carrots too.
Garnish with chopped parsley and enjoy!
