Eggplant, also known as brinjal or aubergine, has a mild, tender, and slightly sweet flavour similar to summer squash or zucchini. When cooked, eggplant absorbs the flavour of whatever it is cooked with and becomes meltingly tender. While eggplant isn’t the healthiest vegetable, it is a good source of potassium, fibre, and antioxidants like vitamins A and C, which help protect cells from damage. Eggplant is also high in polyphenols, which are natural plant chemicals that help diabetics process sugar better. When buying eggplant, choose one that is firm with a smooth, shiny, and wrinkle-free surface. Eggplant can be kept in the refrigerator’s crisper drawer for about three days, but try to cook it as soon as possible. Keep the skin on when cooking eggplant to keep the flesh intact. Soaking the eggplant in saltwater prevents oxidation, extracts the bitterness, and keeps it from absorbing too much oil.
