Ingredients
(marinating the carrots)
500 gms carrots, washed & well dried
juice of 6 lemons
2 tbsp sendha namak/rock salt
1 tsp turmeric powder
(frying the spices)
1 cup, heated & cooled mustard oil
1/4 tsp coarsely ground fenugreek seeds
1 tbsp yeloow mustard seeds, coarsely ground
2 tbsp brown mustard seeds, coarsely ground
1 tbsp saunf/fennel seeds, coarsely ground
1/4 tsp heeng/asafoetida powder
8 garlic cloves
4 whole dry red chillies
2 sprigs of kadi patta/curry leaves

1 tsp deghi red chilli pickle
2 tsp kashmiri red chilli pickle
