How to Make Vegan Eclairs

**Update: The Follow Your Heart Vegan Egg replacer changed shortly after I perfected this recipe. It does not work with the new SOY formula they have replaced it with. I have not come up with a decent replacement or fix for this recipe. I would suggest to go to Moira Wrights Facebook Page called Aquafabulous Baking the Soy Whey- she has come the closest with the most acceptable version I have ever seen for Vegan Eclairs!
