Knifes are notoriously hard to sharpen well because of their curved cutting edge. It is difficult to hold them at a consistent angle on the sharpening stone and I often end up with a blade that is rounded over rather than razor sharp.
There are a lot of different designs for knife sharpening jigs but I wanted mine to be as simple as possible. I do not need a super accurate machine with a fancy complicated mechanism. For most purposes, a sanding block on a stick that runs through some guide hole works just fine. I gave mine five holes for different angles but I don’t think I will even need all of them.
It works great - I don’t even dare to put the knife I sharpened in the video back to the kitchen!
