We slow Cooked an 18 month old Fallow Prickett, which was hunted in it’s prime and is the most sustainable wild meat that you can get in the UK. We basted and injected this baby with rendered beef fat and created our own foraged rub for the ultimate and his boys spent four days planning and making their own water wheel spit, and using the power of the river we slow cooked that beast for 5 hours over a live fire.
