Oatmeal Raisin Cookies

I love a good oatmeal raisin cookie. They make me think of my granny and oatmeal cream pies. These cookies are soft, chewy, and have just the right amount of sweetness for an oatmeal cookie. They also have just the right amount of oatmeal in them. I did a couple trials for this recipe. Three to be exact. Each time I tweaked a little of this and a little of that to create the final recipe and they turned out amazing! The cinnamon adds a wonderful spice to the cookie, and the molasses really brings it all together. I hope you enjoy this recipe as much as I do! -------------------------------------------------------------------------- Ingredients 1 stick Unsalted Butter softened 113 g 1/3 c Sugar 76 g 1/3 c Dark Brown Sugar 80 g 1 Egg 1 T Molasses 9 g 1/2 tsp Vanilla Extract 2 g 1/2 T Cinnamon 4 g 1/2 tsp Salt 2 g 1 tsp Baking Soda 5 g 1 c Old Fashioned Oats 80 g 3/4 c Allpurpose Flour 115 g 1/2 c Raisins 64 g -------------------------------------------------------------------------- My Kitchen Ess
