Quick Pork and Veggie NOODLE STIR-FRY! | HONEYSUCKLE

Pork & Veggies Ginger Soy Recipe:
1/2 lb pork tenderloin
6-8 oz fresh long noodles (ramen, knife cut, udon, everything works)
1 cup mushrooms, sliced
1 bok choy, sliced
1 tablespoon ginger, minced
3 garlic cloves, minced
Sauce Mixture:
2 teaspoons soy sauce
2 teaspoons soy paste or thick soy sauce (sub for more regular soy sauce if you don’t have)
1 tablespoon oyster sauce
1 tablespoon honey
1 tablespoon mirin sake
1 tablespoon water
salt & pepper to taste
Cook noodles according to packages’ direction , rinse and drain.
In a bowl mix together the sauce and set aside.
In the meantime, cut the pork tenderloin into small pieces. Add 2 tablespoons of the sauce and marinate for 10 minutes. Prep the veggies.
In a large pan on medium high heat, drizzle some oil and add the ginger and garlic. Stir fry until fragrant for 1 minute then add the pork. Cook until cooked through and then add the mushrooms. Stir fry for another minute or two until fully cooked and then add the bok choy, and cooked noodles. Add sauce and stir fry until it’s hot and cooked through.
Serve in a bowl and enjoy! Serves 2-3 .
