Escargot salad with Thai-style dressing
-500g escargots
- chopped chillis
- soak in rice water for 1-2 hours
- boil 7-10 mins and pick out the meat, then rub with salt & cooking wine
- 50g pineapple
- 30g galangal
- 4 stalks lemongrass
- 3-4 lime leaves
- 3 shallots
- 100ml water
- 3 tbsp sugar
- 1 tbsp chilli powder
- 1/2 tsp salt
- 3 tbsp fish sauce
- 2 tbsp hot sauce
- 1/2tsp tapioca starch 30ml water
