Chicken Chow Mein
These are my favorite noodles, not just because they are so delicious, but also because of all the hidden vegetables. Chow Mein can be made with either fresh or fried noodles. If you can’t find chow mein noodles, you can use thin spaghetti noodles. Make sure your ingredients are ready and the sauce is mixed before you start cooking. The main cooking happens very quickly.
INGREDIENTS
Step one - Vegetables
2 cups | cabbage
one | capsicum
half | red onion
one | carrot
four | green spring onions
2 tbs | crushed garlic
Step two - Chicken
700 gm | boneless chicken breast
Marinade
1 tbs | cornstarch
1 tbs | water
one | egg white
¾ tsp | salt
½ tsp | pepper
Step three - Sauce
1 tsp | chinese salt (msg)
1 tsp | sugar
1 tsp | white pepper
1 tbs | vinegar
1 tbs | soy sauce
1 tbs | dark soy sauce
2 tbs | oyster sauce
1 tbs | chili sauce
1 tsp | sesame oil
Step four - Noodles
700gm | noodles
Step five - Frying Chicken
Step six - Stir fry
Step seven - Enjoy
METHOD
- Cut the vegetables
- Slice the chicken and marinate it for at least 20 minutes-I have used chicken breast meat, boneless thigh meat can also be used
- Get the sauce ready
- Deep fry the chicken in vegetable oil
- Boil the noodles according to the packet instructions- I used Wan Hua fresh chow Mein noodles-any dry noodles can also be used, tossing cooked noodles with oil will prevent them from sticking together and clumping, however I did not need to do this step with fresh noodles
- Heat the wok until it starts smoking- this makes the surface of the wok nonstick
- Add oil, swirl the oil around so it covers the surface area of the wok, then remove the extra oil
- Add the vegetables
- Add garlic- make sure to add garlic after the vegetables and not directly to the oil for a better garlic aroma and flavor
- Stir fry for a minute
- Add the fried chicken
- Keep the flame at its highest throughout the cooking process
- Now add the noodles
- Keep stir frying at high heat
- Pour in the prepared sauce
- Stir fry for just a few minutes
- Enjoy!
