For a growing number of restaurants in the U.S., the certification that they are “green“ does not necessarily mean a vegetarian menu. They are adopting environmentally-friendly practices. And that means more than simply using locally grown or organic foods but also an array of actions including energy efficiency, recycling and the use of biodegradeable products.
