SUBSCRIBE to see new recipes: 🥣 Ingredients: 220g | 1.5 cup dry chickpea or 500g cooked chickpeas 80g parsley 1 garlic clove 1tsp cumin 1tsp coriander (cilantro) salt to taste 40ml | 2tbsp oil 🥣 Dip sauce ingredients: 100g | 1 small sweet potato 100g pumpkin 40g | 1/3 cup raw cashew 2tbsp tahini 20ml | 1tbsp lemon juice 1tsp cumin 1tsp coriander salt to taste 100ml leftover water from vegetables steaming 🧑‍🍳Cooking tips: ❗Save vegetable water after steaming and use it for dip sauce. This water is full of nutrients ❗You can store baked falafel in an airtight container in the fridge for up to 4 days. ❗You can bake falafel, pan fry, air fry or deep fry! It’s up to you! ❗Enjoy falafel on it’s own with a dip, in a wrap, falafel bowl, or a salad. ❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour. 🥣 Method: Rinse 220g | 1.5 cup dried chickpea with water Soak chickpeas in room temperature water for 4 hours Transfer soaked and drained chickpeas in a large pot, add water, cover with a lid and simmer for 1 hour Peel and cut 100g | 1small sweet potato Transfer to a steamer Peel and cut 100g pumpkin Add 40g | 1/3 cup raw cashew Steam for 25 minutes. Add cooked chickpeas, 80g parsley, 1 garlic clove to a food processor. Season with 1tsp cumin, 1tsp coriander and salt to taste. Add 40ml | 2tbsp oil. Blend until the mixture resembles the texture of wheat semolina or couscous. It should not be like a smooth paste. Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour. Oil your hands and form a falafel to the size and shape you prefer. The mixture should hold the shape. Bake in the preheated oven at 425F | 220C for 20 minutes To make a deliciously creamy dip sauce add to a blender bowl steamed sweet potato and pumpkin. Add 2tbsp tahini and 20ml | 1tbsp lemon juice. Season with 1tsp cumin, 1tsp coriander and salt to taste. Pour 100ml leftover water from vegetables steaming (it’s full of nutrients!) Blend until smooth and the dip sauce is ready!
