Today I will prepare delicious stuffed zucchini crepes, I promise when you try this zucchini crepes recipe and you will thank me 😉 INGREDIENTS: Ingredients for crepes: • 200 g zucchini; • 100 ml milk; • 2 eggs; • 110 g wheat flour; • 20 ml vegetable oil; • a pinch of salt; • frying oil and sour cream. Ingredients for the filling: • 350 g minced meat; • 30 g arugula; • 3 cloves of garlic; • salt to taste Dough: Cut the zucchini into pieces, add eggs, salt to taste, pour in milk and grind everything with a blender, add flour and beat the dough with a blender until smooth, leave for 15 minutes. The dough should not be thick. Using a ladle, carefully add the zucchini dough to the pan so that it spreads evenly. Fry for 1 minute on each side. Let’s make the filling: Finely chop the arugula, add minced meat and garlic to it (you can choose any one you like), I have pork and beef. Mash well with a fork. Place a portion of minced meat on the edge of the crepes, distribute it to the middle and roll it into a tube. Spread sour cream to the finished tubes and top with grated cheese (I used Parmesan) Bake for 20 minutes at 190°C (370°F) .
