Quiet & Cozy Autumn Days In The English Countryside | It’s ok to be sad sometimes | Rainy Slow Days
Spend a cozy and quiet rainy autumn day in the English countryside with me. Reading books, drinking hot chocolate, taking a walk in the village in search of pumpkins, picking apples and baking an apple and pear crumble at the end.

Apple and Pear crumble recipe:
4 medium apples
1 pear
(or use 3 apples and 2 pears)
Juice of 1/2 lemon (if your apples are very sweet)
1.5 tbsp of brown sugar (or more to taste)
2 tsp cinnamon
Fresh ginger (about half-a-thumb-sized piece)
Pinch of salt
Vanilla
Toffee liquor (I used Aber Falls liquor from Wales)
Peel apples and pears, remove the core and cut into small chunks. Grate a piece of fresh ginger (or use 1 tsp of dry ginger). Add fruit and ginger to a pan on medium heat. Add a splash of water to help it cook, squeeze 1/2 lemon into the pan, then add cinnamon, pinch of salt, vanilla and liquor. Let it cook until very soft, then gradually add sugar. I added just under 2 tbsp, but if you like sweeter desserts, feel free to increase this amount.
For the crumb topping:
85g cold butter chopped into cubes
85g plain flour
60g chunky oats
60g brown sugar
50g walnuts
15g dark chocolate
I like to cut butter into cubes first and then keep in the fridge or freezer until I need it. Add butter into a bowl, then add flour. Cover each cube in flour, then start squishing with your fingers. Once each cube is flattened, add oats and sugar and mix well by rubbing between your palms until a crumb is formed. Butter isn’t supposed to dissolve, but rather break down into even smaller chunks. At the end add crushed toasted walnuts and mix with the spoon.
Use single serve ramekins or a deep dish tray to bake.
Preheat oven to 180C/ 355F. Put apples at the bottom of a tray/ ramekin. Sprinkle the crumb on top and then add pieces of dark chocolate. Bake for 15-20 minutes, until the top is golden.
Serve hot with a scoop of ice cream, whipped cream or yoghurt.
