Matt is making his in a backyard in sunny Florida, and you can make yours anywhere you can find a proper grill. Once that is secured get some beautiful beef short ribs from your local butcher and if possible go boneless as it will save you a ton of time later. Some people prefer to use brisket, or even a filet. The brisket takes an exorbitant amount of time and many would agree the short ribs have better flavor than either of the other options, but ultimately this is your call.
