How did salmon grilled on cedar planks come about?
Native Americans in the Pacific Northwest were the first to grill salmon on cedar planks. They would glue the fish to boards and bring them to the fire to grill. This is a practice they have been doing for centuries.
However, the first documented use of cedar planks for grilling dates back to 1911, when the method was published in a Boston Culinary School cookbook. This process was presented here for a recipe called Plank Chicken and Duchess Potatoes.
The Scandinavian people are also known for grilling medium-sized salmon.
They use a process called loimulohi, which involves attaching the salmon to a board with wooden pegs underneath. Pegs work to support the boards vertically, and the bottom part of the boards is placed near the fire for grilling.
