The Green Wall Clock

An entremet with the shape of a vintage-inspired wall clock. It is composed with a crunchy pistachio sable base, a moist pistachio sponge, a soft green apple cremeux , a fresh green apple compote and a light green apple mousse. Decorations are crafted with chocolate and isomalt.
