Ingredients:
For the mousse,

- 120 grammes of passion fruit juice
- 30 grammes of sugar
For the biscuit,
- 150 grammes of flour
- 50 grammes of icing sugar
- 1/2 egg
- 100 grammes of butter
- 1 vanilla bean
- 1/2 lemon
For the chocolate glaze,
- 6 leaves of gelatine
- 180 grammes of cream
- 135 grammes of water
- 270 grammes of sugar
- 90 grammes of cacao powder
