(1) Greek Roasted Lemon and Garlic Potatoes. Taste the Perfection of Roasted Lemon and Garlic Potatoes. (2) Roasted Glazed Carrots. Roasted and rustic, these carrots are to die for Roasted glazed carrots are to me the tastiest carrots you can have. You not only have the caramelisation from the roasting but you also add a buttery glaze to enhance and lift the flavour another step. I like to cut them in a rustic wedge shape, they look more appetizing and you get better caramelisation as there’s more edges. Great as a side dish and perfect for thanksgiving.
(3) Caramelised Brussels Sprouts With Pancetta. Caramelised and glazed in butter with balsamic vinegar. A tasty side dish that could be eaten on its own. Some seem to believe that the humble sprout is the world’s least popular vegetable, I’m sure even the Brussels sprout atheists would fast convert after tasting this awesome side dish. Enjoy it as a great side dish, perfect for Thanksgiving.
(4) Pecan Pie Made From Scratch. Perfect pie every time. The best pecan pie recipe that’s perfect every time! This recipe is made from scratch using of the best crust recipe you will find. You could also buy it and skip straight to the filling part. Work in a cool environment and don’t let the butter get too soft. Want to replace half the butter with lard? No problem, that can be to your advantage in terms of texture. I personally prefer just butter for a better flavour. For the filling, it’s best to give the pecan nuts a quick roast, 3-5 minutes, but don’t over do it as it can destroy their flavour. Use a good natural vanilla but don’t put too much or it can overpower the other subtle flavours. Don’t skimp on the maple syrup, buy the real deal, that’s where the flavour is. Whether for thanksgiving or any other celebration, no one will ever turn away a good slice of Pecan Pie.
(5) Roasted Garlic Fluffy Mashed Potato. Roasted garlic brings the humble mash to a whole new level. For the perfect heavenly mashed potatoes, firstly you need to buy the right potatoes. Go for the starchiest you can find. Always mash them while they are steaming hot inside and it’s also a good idea to heat up your mixing bowl. Don’t ever use a blender or any electric appliance of any kind or you will ruin it. The wooden spoon or a fork are your best options, it will fluff up your mash, and avoids it releasing the starches that can make the texture gluey. The ricer will add extra fluff and help eliminate lumps. I used the three heads of garlic as it does lose its pungency once roasted, so don’t be scared, however two heads will still be fine if you want a little less garlic. But for me, three heads are better than two! 🙂 Enjoy!
(6) Perfect Roast Turkey. Super moist, Slow cooked, Made with butter cheesecloth without basting. This is a no fuss turkey recipe and yet it’s probably the best turkey you will ever taste. There’s no basting required. as basting doesn’t do much anyway, except extends cooking time by opening the oven door every 15 minutes. Once the skin has sealed in the juices, the basting is pointless, as the juices simply bead off the skin, just like water on a duck’s back, or should I say turkey? However, preventing the breast from over cooking and drying will make your turkey moist and incredible. So why do we baste? To keep the breast meat cooler which helps prevent overcooking. This is also the science behind the cheesecloth, it keeps the breast meat cooler, stops it from over browning and works even better with the slow ‘less drying’ cooking process. Best to do your stuffing separately, see my stuffing recipes for ideas. And the gravy? It’s to die for, I kid you not! It’s made with vegetables and enhanced with a dry sherry. As an option, I’ve followed my French tradition by using chestnuts. You can buy fresh chestnuts, sealed bags or even in cans ready to go, so no fussing about here.
