Ingredients: 2 russet potatoes, peeled and diced 2 zucchinis, diced 2 yellow squashes, diced 1 red pepper, deseeded and diced 1/2 onion, diced sausage, 2 large links 2 Tbsp. olive oil 2 cloves garlic, minced 1 14.5 oz can of diced tomato, drained salt & pepper Preheat oven to 375°F/190°F.
