* Ingredients (12 dumplings)*
100g firm tofu
5 shiitake mushrooms (about 50g)
70g water chestnuts (drained)
1 spring onion
1 clove of garlic
A little piece of ginger (about 1 teaspoon)
1/2 cube of vegetable stock cube (if you use OXO, use 1 cube)
1 teaspoon soy sauce
1 teaspoon sesame oil
2 pinches white pepper
1 tablespoon cornflour or potato starch
6 sheets of rice papers (8&1/2 inches or 22 cm)
For the dipping sauce
1 tablespoon rice vinegar
1 tablespoon soy suace
A little bit of sesame oil or Ra-yu chilli oil
