Here’s the Recipe to Emma’s (1885-1904) Ginger cookies: 1 cup (240g) lard 1 cup (240g) white sugar 1 cup (240g) brown sugar 2 cups (16oz) baking molasses 2/3 cup (158 ml) buttermilk 2 eggs 1 Tbsp. ground ginger 1 tsp cream of tartar 1 tsp baking powder 3 tsp baking soda 8 cups (1920g) flour Mix lard with both sugars. Add 1 tsp of baking soda to buttermilk, stir. Add buttermilk, molasses and eggs to mixture and combine. In a separate bowl add 8 cups of flour, cream of tartar, baking powder, the rest of the baking soda, and the ground ginger together. Slowly add the flour mixture to the wet. Spoon dough out onto lined or greased baking sheets. Gently flatten cookies with hand. Bake at 375 (190c) for 10-12 minutes. Makes an buttload of cookies. Highly recommend cutting in half if you aren’t making them for a large group of people. Note on the lard: I used just generic lard from the grocery store, because I didn’t have time to order nicer lard from fatworks (). While I did taste a hint of lard when trying the raw dough, I did not taste it when the cookies were baked. If you want to minimize the chances of tasting the lard, I would suggest using leaf lard, which is higher quality than regular lard. (also the fact that this whole recipe only uses 2 eggs during this egg shortage was not lost on to, unfortunately, keep in mind as well.
