Try out this perfect Veg Kolhapuri sabzi which has a burst of flavours. With the blend of flavourful and aromatic spices, this curry of mixed vegetable cooked in a Kolhapuri style masala gravy is a must try.
Servings- 6
Ingredients-
For sabzi-
2 cups water for boiling vegetables
1 chopped carrot
½ cup green peas
¾th cup chopped french beans
2 tbsp oil
1½ cup cauliflower florets
1 chopped capsicum
¾ cup water
2 tbsp oil
1 tsp cumin seed
1 chopped green chilli
½ inch grated ginger
½ tsp asofoitida {or} hing
½ tsp turmeric powder
3 tomatoes puree
Salt to taste
¼ cup water
1 tsp kashmiri red chilli powder
1 tsp garam masala
200 gm paneer (150g cubes 50g grated paneer)
2 tbsp kasuri methi/ dry fenugreek leaves
Chopped coriander leaves
¾th cup water
For masala paste -
1 tbsp oil
2 small cinnamon sticks
2 star anise
1 big cardamom pods
3 cardamom pods
4 to 5 black pepper corns
1 tbsp coriander seeds
¼th cup dry coconut slices
3 dry kashmiri red chillies
1 tbsp sesame seeds
12 to 13 cashew nuts
