The Pocket Watch!

The pocket watch! This creation is very special as it was conceived for the grand finale episode of MasterChef, Australia. It is composed of a double chocolate chip cookie base, a moist hazelnut coffee financier sponge, a coffee cremeux, a soft coffee vanilla caramel and a rich chocolate mousse. The whole entremet is coated in a dark chocolate mirror glaze! All the decorative elements are crafted out of dark chocolate and it’s finished with my famous sugar dome! This was definitely a difficult challenge for the two finalist!
