Meringue
Egg white 150g

Powdered sugar 150g
*Bake at 200°F for about 2 hours, plus 15 minutes after flipping
*Used a round 807 tip
*This recipe makes around 18-20 portions. You’ll only need 6 meringues for the cake, but I made extra. Feel free to reduce the quantity.
Vanilla mousse
Milk 60g
1 gelatin sheet 2g
White chocolate 75g
Heavy cream 35% 85g
Vanilla bean 1/4 (You can use 4g of vanilla extract if you don’t have one)
*You can make 6 portions from this recipe.
Mango & passion fruit compote
