Baked potato 🥔 #shorts

Ingredients - 4 large washed potatoes - 2 tbsp olive oil - Salt to taste - 1 brown onion, diced - 4 cloves of garlic, minced - 1 tsp chilli flakes - 1 tbsp smoked paprika - Small bunch of thyme - 1 can of diced tomatoes - 1 tbsp fish sauce - 1 tbsp maple syrup - 1 tbsp apple cider vinegar - 1 can of cannellini beans - 100g Swiss cheese - 4 tbsp sour cream Method 1. Start by pricking the potatoes 6 times each, all over with a fork, and rub with olive oil and salt 2. Bake in a 200ºc oven for 45-60 minutes or until fork tender 3. For the beans, add 1 tablespoon of olive oil to a saucepan over a med-high heat and add the onions, garlic and a pinch of salt. Sauté for 5 minutes or until translucent 4. Next add the chilli, paprika, thyme and tomatoes and mix well 5. Now add the maple, fish sauce and vinegar and stir well. Cook for 10 minutes, then add the beans and cook for 10 more minutes 6.
