This healthy Asian style salad recipe has crunchy toppings like baked wonton wrappers and almonds has a rainbow of tastes, textures and colors which makes each bite interesting and it’s relatively easy to make.

230 grams napa cabbage
20 grams scallions (chopped)
For Dressing
2 tablespoons rice vinegar
1 tablespoon vegetable oil
1 tablespoon orange juice (or syrup from mandarins)
2 teaspoons hoisin sauce
2 teaspoons soy sauce
1 teaspoon toasted sesame oil
1 teaspoon grated ginger
1 teaspoon salt
1/2 teaspoon hot mustard
For Chicken
4 cups water
1 tablespoon salt
250 grams chicken tenders
For Crunch
40 grams almonds sliced
6 wonton wrappers
1 teaspoon toasted sesame oil
pinch salt
Other Toppings
100 grams red cabbage (shredded)
130 grams canned mandarins (drained)
50 grams carrot (peeled and shredded)
30 grams cilantro (leaves picked from stems)
