Ingredients Quantity
Bitter gourd 5 no
Salt to taste
Turmeric powder 1\2 tsp
Onion 1 no
Capsicum 1 no
Tomato 2 no
Red capsicum 1 no
Yellow capsicum 1 no
Raw mango 1 no
Water as required
Oil 1 tbsp
Salt to taste
Sugar 1 tbsp
White sesame seeds 1 tbsp
Green chilli chopped 4 to 5 no
Red chilli flakes 1 tsp
Chopped coriander 3 tbsp
Grated coconut ¼ cup
Sugar 1 tbsp
Coconut oil 1 tbsp
Lemon juice 1 no
Salt to taste
Roasted sesame for garnish
Method
• Take a bitter gourd wash it and peel it properly and thinly slice it , remove the seeds ,in a mixing bowl add the thinly sliced bitter gourd add salt to taste , turmeric powder and mix it well and keep it aside , till then slice some onions , julienne the capsicum , julienne some tomato , yellow capsicum and red capsicum , remove the skin of the raw mango and grate it .
• Squeeze the bitter gourd properly n wash them , once its washed properly squeeze it again and remove the excess water from it .
• Take a bake dish add the squeezed bitter gourd , add oil , salt , sugar ,and mix it well and add it in to a pre heated oven at 210 degree c for 20 min on fan mode .
• Till then In a kadhai add sesame seeds and dry roast it properly and remove it in a small bowl .
• In an another bowl add all the veggies , add the crisp bitter gourd ,green chillies chopped , red chilli flakes , chopped coriander leaves , fresh grated coconut , sugar , cold press coconut oil , lemon juice , grated raw mango ,sesame seeds , salt to taste and mix it well .
• Finally remove it in a serving bowl and top it up with left over roasted sesame seeds
