Andhra chicken fry It is a spicy fried chicken from Andhra Pradesh cooked with a specific vepudu masala and served hot with steamed rice. The distinct flavour and taste of Kodi Vepudu recipes have made them popular.
Ingrdient Quantity
First Marinade
Chicken 250 gms
Ginger garlic paste 1 tbsp
Salt to taste
Curd 2 tbsp
For dry masala
Oil 1 tbsp
Cinnamon 1 inch
Clove 4-5
Green cardamom 6
Black pepper 1 tsp
Whole red chilli 2-3
Whole coriander 1 tsp
Cumin seeds 1 tsp
Fennel seeds 1 tsp
Curry leaves 15-20
Onion sliced 1 large
Green chilli chopped 4
Coriander chopped ½ cup
Curd 2 tbsp
For chicken fry
Oil 1 tbsp 2 tbsp
Cumin seeds 1 tsp
Green chill chopped 2-3
Green cardamom 4
Curry leaves 12-15
Onion slices 1 small
In a bowl take chicken and marinate with ginger garlic paste, salt, curd and keep aside for 20 mins
Heat oil in a pan and add cinnamon, clove, green cardamom, black pepper, whole red chilli, coriander, fennel, cumin, curry and sauté for 30 secs
Add onion slices and sauté for 3 mins
Add green chilli chopped and sauté for 1 min
Transfer to a mixer grinder and add coriander chopped, curd and grind to a fine paste. Keep aside
To cook the chicken heat oil in a pan and add cumin seeds, green cardamom, green chilli chopped, curry leaves and onion and sauté for 3-4 mins.
Add the prepared paste. Add little water into jar and sauté.
Sauté the spice till dry and then add chicken. Cook for 6-8 mins.
Cook till dry for 6-8 mins more.
Add oil in regular intervals and fry well.
When the oil separates from the chicken, the dish is ready to be served.
Transfer to a serving bowl and garnish with coriander sprig. Serve hot.
