Benarasi Tamatar ki Chaat Ingredients Quantity Boiled Potatoes 2 no Green peas ¼ cup Black Salt ½ tsp Aamchur Powder 1 tsp Red Chilli Powder 1 tsp Coriander powder 1 Tbsp Turmeric Powder ½ tsp Garam Masala 1 tsp Chat Masala ½ tsp Ginger Chopped 1 tsp Green Chillies Chopped 2 nos Coriander leaves chopped 2 Tbsp Salt to taste Tomatoes 3 nos Ghee/Clarified Butter 3 Tbsp Green Coriander Chutney 3-4 Tbsp Sweet Chutney 3-4 Tbsp Chat Masala 1 tspn Red Chilli Powder ½ tspn Black Salt ½ tspn Coriander chopped fresh 1 Tbsp Papdi 8 nos Bikaneri Sev 4-5 Tbsp Fresh Pomegranate seeds 4 Tbsp Method 1. Whenever I go to Benaras I always go the most famous and legacy shop of Chaats Dinanath Chaat Bhandar which is famous for chats and Gulab Jamun. The Tomato chat is very famous and today I am making the same Chaat for you. 2. IN a bowl take 2 boiled potatoes, Green Peas, half teaspoon black salt, aamchar powder, red chilli powder, coriander powder, turmeric powder, Garam Masala powder, Chat Masala, chopped ginger, two tablespoons of chopped coriander leaves and salt to taste, mash the potatoes and peas, mix the mixture well, set aside. 3. Now take three tomatoes, and slice from the head end, remove the pulp and make hollow pockets for filling. 4. Stuff the potato mixture and set aside. 5. In the meanwhile you can prepare your green chutney and sweet chutney. 6. I make the sweet with chutney with sugar, aamchur and spices. 7. Now in a pan add three tablespoons of ghee and heat on medium flame. 8. Add the tomatoes stuffed with potato spice mixure and cook on slow flame. Once the peels start coming off the tomatoes remove the same. 9. With the help of a knife cut the tomatoes. 10. Mash the potatoes along with tomatoes with a wooden spoon or a vegetable masher. 11. Once properly mashed and well cooked, remove in a bowl 12. Now spice up the mixture by adding in one teaspoon chat masala, half teaspoon of red chilli powder, half teaspoon of black salt, one tablespoon of freshly chopped coriander leaves. Adjust salt as per taste if required. 13. Add one tablespoon of green chutney and one tablespoon of sweet chutney, mix well. 14. In a serving bowl pour the tamatar chaat, pour a tablespoon of green chutney and one tablespoon of sweet chutney. 15. Sprinkle one tablespoon of bikaneri sev and crush two to three papdis on top and one tablespoon of fresh pomegranate seeds. 16. Serve warm 17.
