Gilanese Shish-Andaz is a completely vegetarian and incredibly delicious dish that is very easy to make. The combination of the flavors of ground walnuts, pomegranate paste, and plum paste, along with eggplant and the delightful aroma of persian hogweed (Heracleum persicum) creates an exceptional blend in this dish.
In the past, the people of Gilan used to heat an iron spatula called “Assam“ and put it inside the dish as it simmered to gradually darken the color of the stew.
Some believed that using Assam not only enhanced the color of the stew but also provided the necessary iron for their bodies.
🔴Ingredients for five servings:
500 gr Ground Walnuts
2 Tablespoons Pomegranate Paste
1 Tablespoon Plum Paste
1 Tablespoon Tomato Paste
3 Cups Water
2 Medium Onions
2 Large Eggplants
2 Teaspoons Persian Hogweed Powder (Heracleum Persicum)
Salt and Black Pepper Powder as needed
