Ingredients
Curtido
1 small cabbage
1/4 cup rice vinegar
1/2 onion
1 tbsp oregano
1 carrot
Dough
2 cup corn flour
1 cup water
Salt/Pepper
1 tbsp oil from onions
Filling
1 lb pork
3 roma tomatoes
1 green bell pepper
1 onion
2 tsp garlic powder
2 tsp cumin
1 tsp oregano
Salt/Pepper
Refried beans (optional)
Mozzarella cheese (optional)
For curtido: Soak cabbage in hot water for 2 min. Drain mix all ingredients and let it sit 4-6 hours.
For filling
Season pork (I used new Dan-O’s Chipotle) and cook until done. Fry onions and save 1 tbsp oil for the dough. Broil tomatoes and bell pepper. Add all ingredients to the blender and blend.
