Ingredients:
Risotto:
3 tbsp minced onion
1 cup arborio rice
1 cup parmesan cheese
2-3 cups simmering water
Braise:
1-2lb short rib (or chuck roast)
2 bay leaves
4-5 cups water
1 cup cherry tomatoes
1 whole onion
Filling
12oz braised and shredded beef
1/2 cup caramelized onions
1/2 cup parmesan cheese
salt and pepper to taste
Tomato Jam
2 cups cherry tomatoes
3-4 tbsp brown sugar
1/2 cup red wine vinegar
salt and pepper to taste
Balsamic Reduction:
2 cup balsamic vinegar
5 tbsp brown sugar
reduce until thick or large syrupy bubbles form...
