Ingredients
8 oz Ahi tuna fillet (or 2 cans tuna)
about 1 1/2 cups olive oil to cover
3 cups cooked seasoned sushi rice
2 green onions, thinly sliced
1 inch knob ginger, minced
Nori sheets, cut into strips
1/4 cup mayo
1 Tbsp Sriracha
1 tsp sesame oil
salt to taste
neutral oil
soy sauce for brushing
Instructions
Season your tuna generously with salt on all sides. In a pot, over medium high heat, add your oil and bring to 150f. Add your tuna fillet and cook for 20-25 minutes or until internal temperature reaches 145f. Then remove and let cool. Then to a bowl, add your cooked and cooled tuna fillet. Using a fork, mix and mash your tuna until broken into small pieces. Next, add your green onion, ginger, mayo, sriracha, sesame oil and salt. Mix thoroughly and set aside.
Using wet hands, form your sushi rice around a spoonful of your tuna filling. Then, in a frying pan, over medium high heat, add your Onigiri and cook for 3 minutes. Flip, brush with soy sauc
