I may or may not have eaten the whole portion while shooting…❤️ Apple Cobbler with Homemade Cream Cheese Ice Cream 🍎Ingredients🍎 For the Filling: 4 tbsp butter 4 apples (honey crisp or gala preferred) 1/4 cup light brown sugar (you can add 1/3 sugar if you like it a little sweeter) 1/2 cup orange juice 1/2 tsp cornstarch 1 tsp vanilla extract Pinch of salt 1 tsp ground cinnamon 1 tsp pumpkin spice 🍎For the Cake🍎 3/4 cup flour 1/2 cup granulated sugar 1 1/2 tsp baking powder Pinch of salt 1g 1/2 cup milk 4 tbsp butter 1 tsp orange zest 🍎For the Ice Cream🍎 2 cups heavy whipping cream 1 can sweetened condensed milk 4 oz cream cheese 4 oz mascarpone cheese Vanilla bean or 1 tsp vanilla extract Instructions Preheat the oven to 350F. Peel, core, and cut the apples into 1/4-inch slices. In a large pan, melt the butter and transfer the apples into the pan. Add sugar and spices. Cook for 2-3 min while stirring. In a small bowl, add cornstarch and orange juice and mix until the cornstarch dissolves. Add the mixture to the apple sauce and cook, stirring for one min. Remove from the heat and transfer the apple mixture into a 9x6 baking dish. Set aside. In a medium bowl, mix together the dry ingredients; flour, sugar, baking powder, and salt. Add milk, melted butter, and vanilla and mix until just combined. Pour the batter over the apple mixture and spread roughly. Bake for 35-40 min until golden brown. Let it cool for 15-20 min. Serve with easy ice cream. Preparing Ice Cream In a medium bowl, mix mascarpone, cream cheese and condensed milk. In a large bowl, add cold heavy whipping cream, and using a hand mixer or electric mixer whisk the cream until soft peaks form. Add the cream cheese mixture into the heavy cream bowl, and using a rubber spatula fold the mixture until combined. Pour the mixture into a chilled loaf pan and freeze until it is thick and creamy, 3-4 hours.
