Crispy Eggplant Roll Ups are the BEST THING EVER

Snack, snacks, snacks. I love snacks! The crispy eggplant roll ups are the ultimate tasty treat for family and friends. I served them up at my last party and they were devoured in minutes. The great thing is, they can be made up in about 30 minutes with a few simple ingredients. Lately, that seems to be the trend here at Cook n’ Share. All you will need is eggplant, ground pork, some seasoning, and you are off the the races. I always serve mine up with sweet chilli sauce, but it’s your call.
