Jamon is a large piece of dried and salted meat - mainly the hind leg of a pig. However, for those who are not allowed to eat pork by religion or who simply prefer lamb, there is also jamon made from leg of lamb. In the preparation of jamon, a certain list of spices is used, salt is added, and the process itself is carried out only under strict temperature limits and humidity levels.
