Hello Cozy Autumn - Facing Changes & Fear At The Start of New Season | Autumn in English Countryside
Welcoming cozy Autumn in the English countryside. Alas, together with autumn comes its friend - seasonal depression. I have been hit with the end of summer lethargy/ start of autumn sadness for quite a long period of time now, and only recently started getting out of this deep rut. I am afraid of change. But change is inevitable.

Apple Cinnamon Swirl Loaf recipe:
Apple Loaf:
100g softened butter
100g sugar
2 eggs
250g flour
1 tsp baking powder
200 ml milk
1 tbsp vanilla
pinch of salt (or if using salted butter you can skip extra salt)
Whisk butter and sugar together until creamy. Add eggs one by one, then vanilla and mix well. Then add flour and baking powder through a sieve (sieving it will help to make a fluffy, moist cake). Gradually pour in milk - the batter will be quite sticky and glutinous, but it should be easy to mix. You don’t want it to be runny or too hard.
Cinnamon Swirl:
65g brown sugar
50g melted butter
2 tsp cinnamon
2 tbsp maple syrup
Mix all ingredients well together.
Apple filling:
4 medium apples
2 tsp cinnamon
Peel and remove cores from 4 apples, chop into fine cubes. Place in a bowl with 2 tsp of cinnamon and mix well.
Preheat the oven to 160C/ 320F
Grease a loaf tin or line with non stick baking paper.
Place half of your batter to the bottom of a tin. Add half of cinnamon butter mix and lightly swirl. Place half of your apples on top. Then repeat again with the remaining batter, then place the remaining apples and then top it with cinnamon butter mix. Swirl with a knife or spoon incorporating the toppings into the cake butter lightly.
Bake for 50-60 minutes at 160C/ 320F, checking that the top does’t burn. Check by inserting a toothpick - if it comes out clean, then the cake is ready. The cake will look a bit dark on top if you’re using brown sugar. That’s ok and it shouldn’t burn if you’re not baking it on high heat.
