Ingredients
2 Canned Chickpea drained
1 small plantain
1 medium onion diced
2 Cloves garlic finely chopped
2 Nub spring onion
1 nub Ginger finely chopped
1 Can Coconut Milk
1 medium tomato
2 Tbsp Olive Oil
Fresh Coriander
Spices
2 Tbsp Curry Powder
1 Tsp Cumin
1 Tsp dry thyme
1/4 Tsp Sea Salt to taste
1 Tsp flavour enhancer (optional)
1/8 Tsp Black Pepper
2-3 dry red chillies or any other variation
